Pizzadillas and Wings

Made Pizzadillas and wings for the Super Bowl Party.
The Pizzadillas are Quesadillas with Pizza toppings. Here is how it went:
Toppings: Pepperoni, Salami, Italian sausage, olives, mushrooms, and precooked peppers and onions

For the sauce I used tomato paste, ground oregano, thyme, garlic and onion powder, black and white pepper, seasoning and regular salt, and Italian mixed herbs

Added the spice mixture to the tomato paste and started adding a little water gradually

The mixture should no be runny so it won't make the tortilla saggy. I ended up adding 1.5 cups of water and 2 tsp of EVOO to 12oz can of tomato paste to get to the right consistency

So here is how I assembled it:
Spread the tomato sauce on the tortilla first

Added Mozzarella cheese and some cheddar cheese

Then  Pepperoni and Salami

and olives and Romano cheese

Topped it with another tortilla and onto the flat top at low heat

Grilled it on both sides until the cheese melted and all the topping were warm

to the cutting board

And cut into wedges

Yum, best Pizzadilla I've ever had, well it was the first I've ever had :)
I showed the guest how to make them and they picked their own toppings while I tended to the grill. One thing you don't want to load up this like a pizza, because the tortillas not as tough as the dough, but can hold just the right amount of toppings.

I did the wings 2 way
First was traditional Buffalo style
Fried in my Cajun fryer. I did sprinkle the wings with corn startch prior to frying for some crispiness

Then tossed in Buffalo sauce


For a small batch I decided to try a new thing. I wanted to try an Oil bases sauce to maintain more crispiness. Traditional wing sauces are water base and tend to take away from the crispiness of the wings.
So I mixed the following spices
Paprika, cayenne, garlic and onion powder, thyme and oregano, black and white pepper, seasoning and regular salt, annatto powder for color, and citric acid

Heated a mixture of clarified butter and evoo

And dissolved all the spices in it and added just few drops of vinegar

Kept the mixture hot while frying the wings and then tossed the wing in it and placed them on the flat top to get even crispier

There were very crispy and tasty. I had mixed opinions on them from my guests. Some liked the traditional wings better others thought these were tastier. It all depends on personal preference, I liked them both equally.

Also fried some fries and onion rings to go with the meal :)


Sorry this was not grilling, but it was still outdoor cooking, which I truly enjoy.
