I've always been intimidated by lump charcoal.  Not sure if it's because the temp can skyrocket quickly or because it is just not the perfectly shaped briquets that I grew up with.  Thank you for the tips!  I'm going to take the leap this weekend and do a chicken (or 3) using lump.
