I love that feeling as the sun sets on your overnight cook (double butts on the WSM).

We just did back to back butts Mike! I'm just about to pull mine and you are just getting started. It's the 24 hours of le butts!

I hear ya! I love it when your hanging around the WSM and its been dialed in for maybe 4 or 5 hours, it's burning nice and clean and you get that smokey/meaty smell and you just know that your going to turn out something awesome. Like nothing else!

The best for me is getting up at 4 am, lighting the fire I set up the night before, putting the meat on and sitting on the patio, smelling the smoke, listening to the songbirds, and watching the moon set as the sky begins to brighten. That's the best. Well, second best. The best is going back to bed once I'm sure everything's stable.
