Glad to be here! I inherited an old 18" kettle, replaced a few parts on it and started cooking! I loved the versatility of my little weber and the results were so good, I was able to convince the wife to get the 22" (my 4th charcoal grill after she told me 3 was my max)! I'm hoping to learn some more tricks/mods, as well as check out some new receipes.

I'm not sure if there is a post already, but I was curious if I could use indirect heat with 2 of the baskets split side to side and put a drip pan between them with potatoes and herbs, and a spatchcocked chicken on top? I feel like I've seen a recipe somewhere, but can't seem to find it.

Would I have a risk of burning the potatoes that close to the coals?  Any advice/tips would be great!

Thanks!

Welcome from Doraville Ga  use a single basket on your 22 and do just as you described, plenty of heat and burn time in a single basket for the cook you envision

Welcome to the Forum.  Potatoes with vegtables (carrots and celery) can be done in a pan between the charcoal baskets.  It is nicknamed "cooking in the basement". Try using the searching basement.  Here's a couple of threads using the method:
