Title: Vortex spatchcock chicken.

Brined for 4 hours with salt, lemon and garlic.  Started the cook at 450F for the first 15-20 minutes then dropped it to 375F. Once it reached within 10 degrees of target internal  temperature, i opened all the vents and finished cooking at 425F.

What is annatto flavor like? Or do you use it just for color?

What is annatto flavor like? Or do you use it just for color?
It has very mild nutty, sweet, peppery taste but it's used primarily as a food coloring. Great for poultry or pork such ribs when cooked on the kettle. I also use it on any types of meats for stew, stir fry etc.

How do you make this oil that gives great color I have annatto paste will that work

Paste works also. Just dissolve it any oil of your choice.  For poultry, i prefer to use duck fat.  Warm up the oil in the microwave and the dissolve the annato paste.  Just add enough paste to get the oil a dark orange color.  Brush the chicken with oil after  15-20 minutes  and every 20-25minutes  thereafter until you're within 10 degrees of your target internal temperature.
