I’m doing a Santa Maria style cook with some plum wood. One of my trees made the ultimate sacrifice.

I would make this again. The roasted pepper vinaigrette was really good and the flank steak was fork tender.

I sometimes just roast my peppers right in the hot coals. CAVEMAN!

And you were contemplating getting rid of the wsm!

I liked the plum a lot. Pleasant smell and taste like a lot of fruit woods but unique as well. This particular plum was an ornamental non fruit bearing type. It didn’t look like it was going to make it this year so I cut it down.

I never gave up on the concept. I was just going to change to a 22 set up similar to Jules kettle stackers which I still want to do.

Regarding the tri tip, I drew my inspiration from white thunder bbq. I like all of his stuff.
