Thanks to a member here sending me some handles, I decided to do some refinishing today. Thanks again @smokeyjoe ! They were 2 from a GA grill, and in pretty decent shape. I should have done them at the same time, because they didnt come out as uniform as I would have liked. If your not worried about saving the weber lettering then you can be a little more thorough and they come out really nice.
Basically sanded off most of the old finish, filled in the lettering with black sharpie, then burned them with a torch. Then hit them with a wire brush, sanded them a little and hit them with the brush again. And applied this "barn red" stain. Waited about a minute and wiped it off. They have a blue color too, I'm about to do the one touch plus hamdles one of these days. They looked so good that I went out and scavenged the handles off of my red head too. Probably gonna become wsm handles too. My plans for the 2 from smokeyjoe are to go on the new 22" wsm. I didnt take many pics, I will try to do a better write up when I do the otp if anyone is interested.
I guess I didnt take a pic before sanding off the finish, but one was in perfect shape, one was close.

Those look good! Forgive my ignorance but how do you remove the handles that are riveted on? Just drill them out? Once you do that, how do they get reattached?

I'm pretty sure if you buy your handle from grill handle.com it comes with something to replace the rivets. I havent done one yet, so I'm not sure.
I did that one while it was still on the kettle.

Here is what the stain looks like if you dont burn the handles first. Just sand, fill in with sharpie, sand again, and stain. I will put poly on everything tomorrow. Shout out to @SteveMBH for sending the handles.

Here is the stain and sharpie I used

Gonna see how many coats of poly I can get on these things today.

How many coats did you end up getting on?

Looks really good, well done.

I went ahead and did the c code handle, no poly though. I think I like it better without it.
