That I haven't made her steak in a really long time as I've been smoking too much 'bulk' stuff on the WSM.
Huh,,, challenge accepted. And on a Wed night - she didn't even see it coming. lol

Fired up the newer Performer with a ring of RO Lump. I've been using my expanded steel charcoal ring as is, but very recently wired it to a charcoal grate for an 18" to help retain the smaller bits of lump from dropping into the ash can.

As long as I was outside..... I used the Genesis for the 10.25" CI skillet full of sprouts, fungi, & onion.

Yeah, that'll be warm enough... And this is where my action shots stop as I tossed in a handful of apple chips, replaced the cooking grate, and put the meat to the grill. It all happens in a matter of seconds, but so does the flare up of apple chips. I try to get the lid on ASAP and no time for photos.

After resting about 10 minutes, I cut the filet off of one.

That looks pretty good. Beef is on the menu here as well. I'll be heading out for some groceries in a few minutes and will be checking to see if sprouts are still in sale. (Not in the sale flyer... but red peppers are! And I just finished the last of the previous batch of roasted red pepper dip last week. :D )
Good use of cast iron as well. It is well suited to the grill.
