At what point do you go, nope?! Supposed to be really nice here on Sunday, but 20-30mph wind. Really want to spend the day with the smoker, but is it safe?

If you can, put the smoker down wind of an obstacle or structure so that the wind is blocked at least partially.

Plus, I'm active in wind sports. Frequently I'm let down and the wind is not as forecasted and may not last but a few hours in a given day. Just keep an eye on the forecast.

No ash pans for me but if I can cup my lighter to get a fire starter lit then I'll cook. The worst so far was some high winds a month or two ago. I think the gusts were 30-40 and it came out of nowhere. I was doing pizza and the temp started dropping. Not a fun time but we didn't starve.

Here in Kansas we cook in wind...Period...If I waited for calm winds I would never grill or smoke...In fact I struggle to keep temps steady in calm winds...If that makes sense...

I was pretty well set to go, before I posted. This just reaffirmed it. I'm ready for a scotch and a stogie. Can handle the vent management. Was more thinking about safety. Don't think the 18" WSM will be an issue. Boneless pork loin back ribs are on the menu.

I was at the Saint Georges Blues Festival last year, cooking backstage with two of my Webers for the crew and musicians. It got windy as hell, and one of my kettles blew over. What a friggin' mess that was!

You should be good up to point. You'll want a decent wind break of course and keep to upwind bottom vents closed. Top vent downwind. That should keep temp fluctuations down and coals coming out of vent. As far as tipping over...load that sucker up. Put 40 lbs of meat in there.

Ribs are rubbed. C code 1880 is getting the call. Lunch will be wings. That grill is yet to be decided.

Here in Desert Center CA we have winds in the afternoon that are 15 mph or higher a lot. I actually built my gadial ganning to block the prevailing wind so I could grill more often

15 mph is considered fairly calm in Kansas...20-30 is the norm...30-40 is not unusual...

Exactly. I can't see getting anything other then a weber with the ash catcher instead of the ash pan in my area because the winds can pick up during the day. Just bought my first weber, the Master-Touch on Friday and saw a bunch of lit coals dropping into the ash catcher during my first cooks. Would love to pick up some older colorful Webers but they only have the ash pan. Is there a mod to change them to use an ash catcher without too much trouble?

If they have the one touch system it's pretty easy to change over. If they have the 3 wheels, probably not.

I put an ash catcher on my 18 inch, t was a matter of ordering it and snapping it on, best 18 clams I ever spent upgrading a weber. If the notches are not in the leg sockets you can just straiten the ends of the clips and use hose clamps.

I have a (I think 99') red OTS, with no notches.

If you have a new style one touch system the ash catcher bucket fits right on, it is less than a 5 minute mod from walking out the door to the grill and having it on. the slots that it fits in are already on the grill

I just pull my weber around the house. Find a spot with no wind.
I only cancel if it's windy and rainy.
