Title: Grilled Cornish Game Hens

We brined some cornish game hens last night in water, kosher salt & maple syrup. The XC wanted to do it all on her own. I was a tad nervous about her butterflying the hens...silly me...

11, and appearently she does pay attention (shit, I'm screwed!). She removed the backbone and the breastbone all on her own. I was damned impressed. Not to mention proud.

The hens are rubbed with ground juniper berries, garlic, sea salt, coarse ground pepper and coriander. The rice is wild rice with quinoa and butternut squash.

those look fantastic.

so you spatchcock them, but then cut out the breastbone too - so you one hen becomes 2 half-hens?

When you remove the breastbone, you don't need to cut all the way through the meat. The 2 halves stay together. If you trim the breastbone correctly at the rib end (the neck end) you can pull the breastbone out in one piece. It's a pretty slick method.

KG, it's nearly time to pass the baton. That is one fantastic meal! That rice looks out of this world and a must try. I really like cornish hens and know wild rice was made for them. I give this cook a 10! :)

Outstanding work! I've wanted to do some cornish game hens for some time. This is an inspiration to get going on them.

This happens in football all the time, a starter goes down with a injury and their backup comes in and takes over :) welcome to the second string, she's got taste for it now, great work on those birds

Great looking meal! Seems like you may need to gift this grill to your daughter now and replace it with something else for your cooks. Looks like she may have her own show on the Foodnetwork in the near future.

Wow!!  At least you have some one to take good care of you food wise...  I'm trying to get my kids involved with grilling and cooking.  So far my son just likes the fire part :o

LOL! I have thought about that. It's a good thing she hates the smell of the big, hop monsters I drink. However she does pull a tap better than most of my buddies. Hey, I'm still in my sling and I needed someone to get it for me!!  ;D

I can tell ya that your "XC" Will be a freaking star on any foodnetwork show thingy before you know it! She is turning out to be: not daddys girl anymore she is a Girl with a Dad.

She did a great job KG!!   That's right..grab some bench!
