My lovely wife, knowing the week I've had, surprised me today by taking the kids to Grandma's for a swim day/sleepover.  What to do with a whole day and night in a quiet house all to myself?

Today officially became Dad hangs out in the garage, smokes ribs, drinks beer, listens to loud music, takes naps, burps, farts, and scratches to his hearts content Day.  First step acuire the meat...

I decided I felt like some Beef Short Ribs so off to the butcher for a nice 2-3 bone slab.  Once that wheeling and dealing silver tounged fox of a butcher of mine was done with me I was walking out of there with 2 racks, roughly 14lbs, of beef ribs.  He did give me a great price and more importantly a reason to fire up one of the WSM's.

And away we go.

I'll check back later with some pics as things get further along as long as all the beer and scratching doesn't get the best of me.  [emoji41]

3 hours in.  Ribs around 165.  Coming along.

Good thing this is the situation:

....one cook you don't want to rush is these things.....looks grate so far !!!!!

Had that salesman of a butcher of mine cut the racks in half crossways.  Thin ends just came off.

Probably another hour for the meaty hunks.  Sorry for the somewhat blurry pictures.  Must be all the scratching.
