I just did a reverse sear tri-tip on my copper premium, I think it was the best I've ever had. I used royal lump charcoal and cooked indirect to 127. Pulled and let rest to 138. Then went direct 1 min per side. Just seasoned with salt, pepper and garlic salt. Amazing!!!!!!
