Title: Scotch Egg, Faux burnt ends, and Salmon

I have never tried scotch eggs before.  I was already planning on a surf and turf cook, and decided to have a go at it.

Faux burnt ends - got this meat at Costco.  I wanted to recreate burnt ends without the cost or time of a brisket.  Seasoned with a combo of my favorite commercial rubs:

After 6 hours in my smoker:

Next up, Cedar plank Salmon two ways.  Commercial honey rub and my own coffee rub:

Scotch egg prep.  I used some wild boar sausage seasoned heavily with dry rub.  We started calling them "Boars Balls":

Wrapped and ready to go.  After this pic, i dipped them in egg and rolled in breadcrumbs:

Bisbee gets the call.  A little over a chimney worth of Royal Oak  :)

Cooked the Salmon direct, and the veggies and Scotch balls indirect.  Cut up the faux burnt ends and wrapped them in foil with au jus and BBQ sauce.

The Payoff.  Beef, Salmon, Scotch egg, Asparagus, and Caesar salad:

Boars Balls are fun and easy to do!  Great for parties or as a side dish to a meal.

Great lookin' cookup !!!

What kinds of beef...looks like flatirons or the like.....

I like tri-tip leftovers, still with some fattiness left......nice B. E.'s & boar balls !!!

Scottish Eggs are my favorite Easter Snack :)
The beef looks like boneless short ribs; I see them at Costco often.

Which reminds me, when are we getting the Cooking with 1Buckie article?  Personally I think it should skip being an article and go straight to a youtube show with its own channel.

Past couple of months, I've had this recurring dream (vision, nightmare, call it what you will !!) that we should ALL pile in & start a cable TV reality show.........everyone who can or wants to can be in the rotation...... :o 8)

Oh, heck no.....

I meant travelling all around & filming people in their natural habitat....... 8)

.....then put it up as all one ongoing show, checking back in to see how the rescue & rehab went, what happened with that acquisition, how'd the overnighter turn out, what did you trade who for that kettle.....and ongoing...... :D
