Title: WSM temps

I'm sure someone has measured this, but does anyone know how the temps compare in the WSM from the top cooking grate to the lower cooking grate?  Does it vary more if the water pan is empty vs full?

Dome temp is typically 25+ degrees hotter than grate temp but it also depends on your setup and running temp. Ie. If you are trying to run the wsm @300 you'll get more temp variation with water than trying to run it @ 225.  This variation assumes that there is a heat deflector. Without a deflector than you also need to account for radiant heat from the fire. Water would make the center portion of the grate cooler, esp for the bottom grate. Other variables you need to watch out for is sunlight. The wsm lid can get quite hot with the sun alone beating down on it. Not that you have to worry about that in IL. :P
