Trying a Fatty for the first time today...
Went with some good quality pork sausage as the base for the roll, and of course had to do the bacon weave. Cheese mixture of colby and shredded pepper jack.

I will definitely be making more fatties soon. Easy to make and super delicious.
Next one, I think will go with some maple sausage and some sweeter filling....time to get creative! ;D

Nice Max! Looks like you nailed it! And that yellow is REALLY nice...Just a tip, you do not have to sautee the onions and pepper before hand..they will cook in the fatty on their own. Nice job man!

I was concerned, and like Gunner said, that the saute' liquids would make it too runny inside, but it seems there's no tradgedy involved here....no tradgedy at all...... :D
I had that problem with the 1st few I made.....trying to use things like pesto; just came all unglued.....
Found a simple fix though..........just add in some Panko bread crumbs & they absorb the excess stuff......

I've read on bbq brethern about most fatties taking 2-3 hours, but this one got up to an internal temp of 178 in only an hour and a half, so I pulled it then. Ole yeller likes to cook hotter than most of my other grills. 325-350 is her sweet spot.
Worked out juuuust fine. Yumm! ;D
Whoa, the inside of that fatty looks excellent. Many fatties I see look like mush on the inside (although i'm sure they tasted ok too).
