A wood spatula moistened with warm water works pretty well to spread out the meat.

Twisting the ends of the wax paper seemed to do a decent job sealing in the cheese.

A second piece of wax paper and rolling pin work well too.

For any of you who have not tried a fatty of some sort or another, you really are missing out. I have been doing naked fatties up to now and they are pretty good. If you have the cooker fired up for something else, throw one or two on to take advantage of the charcoal. If you have some time and a few extra ingredients, stuff and/or wrap the fatty and take it to the next level. This one was good too. The chorizo came out a little loose - that's its nature - but the flavor was spectacular!
