Title: Gulf Snapper Fish Fry

So, not technically grilling, but the hot plate and oil pot were on the Summit so.....

More of our snapper from our great friend on St. George Island @AZ2FL and these were a treat.  I've always wanted to make a copy or something similar to a Captain D's or Long John Silver's type of fish batter and this was it.  It did need more salt than the recipe called for and it would be a dead ringer copy.  Meal was very good, was targeting 350F for the oil an was falling a bit short.  Maybe I put the fish in too quickly.  All in all a do-over, just need a little more salt in the batter.

Recipe I found.... next time I'll probably double the salt.

Damn that looks tasty, had similar battered fish (hake) in the pub last night, big fan but never thought of making it at home

Thanks Tommie..... Next time I'll also go a bit higher on oil temperature as well.
