Title: Pork Steaks on the Ranch
Post by: bamakettles on April 06, 2026, 07:51:59 AM
Found these at Publix a while back for $8 and figured I'd give them a try.  Marinated in a solution of 4 cups water, 2 tbsp white sugar and 1 tbsp kosher salt for about 6 hours.  Seasoned with It's Incredible and Lane's Signature seasonings.... I have to admit that I over-seasoned, but they were still good.  Cooked indirect at about 275F to an internal temp of 145F then seared over hot coals which turned to fire quickly - probably about 30 seconds per side.  Heavy dinner that we couldn't finish included mac n cheese, collard greens and cornbread.  All in all a fun cook.  Hoping everyone had a nice Easter.

Cheers!
