Beautiful weather yesterday so I took the cover off the Summit for some smash burgers. Setup included a Kamado Joe Big Joe griddle and a foil lined Weber charcoal basket under the drain hole. Oh how I've missed the smell of B&B Oak Briquettes firing up.... 80/20 3oz balls seasoned with a mix of kosher salt, fresh black pepper and Lawry's seasoning, topped with Boar's Head yellow American cheese slices. Once you've tried this cheese you'll never go back to Kraft singles that basically liquify. We wrapped with leaf lettuce and added onion and tomatoes for a really good burger! Tots for sides - one of my favorites.

Love using the griddle.... Beaux got a couple of these as well and he continued to sniff me the rest of the evening. When you cook a smash burger, you wear a smash burger lol....
And lunch today...... Nothing tastes like a smash burger.

I've been staying away from anything labeled as "Cheese Food" for a long time. Over the years, I have gradually made the change over from Yellow to White American. I have also found a brand that makes Whole Milk Mozzarella.
So, with that wrap, do you basically pick it up an eat it like taco?

We've been staying away from cheese food as well and also like the Boars Head White American on a burger.
As far as how to eat, it really depends on how you build it. Sometimes we fold everything in half, then put on the veggies - much like a taco. I tried tostada style this time with two patties and ending up with a knife and fork. Either way they are pretty messy! It's amazing how much a bun changes the flavor. I'd never thought about it before trying them this way, but the beef flavor really shines through and you can taste the condiments and veggies so much more.... I still like a bun, but this way I can introduce having them to Kellee with a "healthy" approach which always helps. Trying to steer clear of bread and pasta if we can with the promise of a couple of beach trips this summer/fall. We tried a carb friendly pasta last night with her famous sauce and it was like straw and not good!

My sister and B-i-L are coming down Thursday for a stopover on their to see their daughter in Tampa. They want burgers, but I'm confident there will be buns involved. That and . . . Tots !

Sounds like a great time will be had... and as you know, I do like some tots. Kellee is Italian as well and she makes one heck of a sugo - and so many other Italian recipes. Low carb is tough around here too!
Our local watering hole doesn't offer tots. I keep telling the owner he needs to add those to the menu. Great looking burgers
