Title: Sockeye Salmon with roasted veggies

It was a super nice evening here on the West Coast and salmon was on the menu for dinner!

Cedar planked fresh sockeye fillet with cast iron ginger garlic carrots, lemon potatoes and stuffed Portobello shrooms.

I normally char the plank a bit before adding the fillet and grilling, but this time gave it a bit longer to bronze up and it added just the right amount of additional cedar taste for our likes.

Thanks everyone.

The carrots were a winner for sure. Painfully easy - literally just loaded up the little CI pan with some butter, chopped garlic and ginger and let it do its thing just until the skin starts to welt/blister a bit. Perfect bite thru texture and tasted like candy!
