Not 100%. I use one for my wood stove, but it isn't adjustable.

Hopefully they help a bit. What I gather from these resources is that the color and reflectivity play a part in your measurements with the IR gun and you can adjust (assuming an adjustable model) you temp reading by an emmisvity reading (which you knows!).
From you cookin' pic, your gun should read "ready to cook buddy, gimme some more!"

For acurate surface temperature reading, you need to adjust the emmisivity to the specific material/color you're aiming it at.
I typically use a surface temp probe to verify the correct emmisivity setting.

Apply a thin layer of cooking oil on the cook top and set the emissivity to 0.95. Same emissivity setting if you're deep frying and want to check the oil temperature.
