I picked up this monster on sale at Safeway for like 50%off . I started by doing a low 250ish smoke with hickory for around 1.5 hours then transfered to a foil pan with chicken stock and brazed till it got 145 internal ,rest then cut up into sections for freinds and neighbors, they all tasted and had nice smiles with there mouth full. I thought it had a nice smoke flavor mild but excellant smell. No plate or brazed photos as it was going out the door fast.
