I love Hatch, New Mexico chiles roasted.
When living in Arizona, the local Mexican markets would sell roasted Hatch chiles by the bushel. The smell of roasting peppers is amazing. I'd buy two bushels of medium hot roasted. Take them home, remove seeds, stem & skin, vacuum seal and freeze.
