In all the years I have been cooking meat over fire, stuffed chicken breast never occurred to me. That should really help the whole plain and dry thing with the usually boring chicken breast. Of course a bacon wrap makes everything better! I think I'll steal this idea shamelessly for an upcoming smoked meat Sunday. Bravo sir.
Is that cooked hot/fast or low/slow?
It was cooked on my SmokeFire pellet grill for 1 hour at 350, then another 30 minutes at 415, to help cook the bacon. Was at 140 at one hour. Right at 165, with that extra 1/2 hour. I just cut the breasts almost completely in half/butterfly style, laid out the bacon. I put the open breast on the bacon then put the filler on. I then just rolled it up. Placed seem down.
