Thanks! It's super easy. 2 lbs Italian sausage. Cook and add 1 small jar of prego or whatever you like, add some cheese and chopped up pepperoni to the mix, cook covered on high indirect heat for 15 minutes then add shredded mozzarella and provolone and let go another 15 minutes.

Love the ripe ones. Can't do the green peppers.
We like to fire roast the peppers, peel em, stuff em , and grill em up much like you described.
Pizza filling sounds pretty good.
