The wsm does the absolute best job. I just had the 26" ready to go.

My next chicken cook will be in the wsm!  Thanks for reminding me.

Was that all real time?
I am guessing about 35-45 minutes...??...

Wings look tremendous!
Good call going with whole wings.
I prefer those, too, as they are much easier to work with.

When you cook them direct on a kettle, is your charcoal in a single layer?   The goal is direct, medium/low heat but not as intense so you get crisp skin without burning or undercooking the interior.
