I went to my local butcher and asked for a good size rack. Once back at home I put a thin layer of mustard then a Lanes brisket rub. I loaded up the slow N sear, once at temp the ribs went in for about 6 hours at 120c about 250f with a chunk of Australia black wattle. At the 6 hrs mark I wrapped the ribs in butchers paper (they were at temp but not ready). I gave it another 2hrs in the kettle and a 45 min rest. The best ribs I've done to date.
