Decided to try something a little different. Mozzarella stuffed mini fatties. 1/4 pound sausage (normal Jimmy Dean and hot Italian) wrapped around half a string cheese stick, then coated with barbecue rub. Wrapped in plastic wrap, then frozen for about half an hour to firm up. Smoked with the Slow n Sear for about an hour with hickory. Another really good cook!
Cooked with about 20 lit coals on top of half a basket of unlit, with a hickory chunk on top.
An hour later...one had a "blowout".
Resting a few minutes before I try one.
Of course, I cut into the blowout. Cheesy, smokey and tasty! What a great idea. Sadly, I didn't notice how blurry the picture came out. Did my best to fix it with photoshop.

Its been nothing but rain here so I havent had a chance to try these. I think I may add some cream cheese and diced jalapeno inside there too.

Yes, 1/4 pound was perfect. And the sweet Italian sausage was definitely the winner. Both were incredible, though.
