As in hay for horses?
Never heard of that.
What kind of flavor does the hay give it?

Its an old-school French technique. Article says it gives a subtle tea-like quality to the bird.

Yep hay that you feed pet rabbits etc. Try it. Pretty amazing!

You can almost use any fresh herbs. Lavender is particularly good for roast lamb!
