Cooked at  it 450-475F for the firsf 15-20 minutes then dropped the temperature to 325F until the meat reached an IT of 135F. Opened up the vents until  it got to 425F for the duration of the cook. Pulled it off and let it rest once meat hits 155F.

It's marinated pork...usually carved off of a spit just like that. It's awesome!

Looks great as usual Jules.
Can you post the ingredients for this? I have tried a few different recipes and they are always lacking something.

I have a few Mexican restaurants that make very good pastor near me but would very much like to make this for myself.

The marinade /instructions I've been using is on the following link.   Always turned out great for me. If time allows, try to marinate the meat for 16-24 hours.

Typically  i use salsa verde on al pastor but didn't have the tomatillos so i didn't make them.
