i had a strange experience last time i did ribs...lump coal on on side of kettle..dual probe...had my rack of ribs on..one probe grate level hit 270 which i like...the other probe near top of ribs so guess 2 inches higher elevated..temp was saying 340? got the same readings switching probes...could not believe such a higher reading for only few inches.....so basically thinking if i want next time to cook at my ideal temp of 270...have to wait till bottom probe says 250 top says 300? thus 275?

Use the grate probe. You will get your best temp reading there.
I usually don't use probes with ribs. The kettle is going to be at the temp you set it. Just cook the ribs offset and take them off when they feel done when you poke them.
Ribs and butts are only tricky if you cook them hot and fast. Cooking them low you only have to take them off when they are done.
I NEVER use probes with ribs. Look and feel. And yes, if you are gonna use a probe for anything, grate level is all you need. Don't over-think it.

Ditto. If I need to take temps of anything (not ribs), I use my Thermapen. I HATE cables running everywhere... Just sayin'...

I was never frustrated with being able to hold a temp because I never knew what it was
