Title: Smoking Cheese

I have recently gotten into smoking cheeses. I have done a few types of cheddar, muenster, pepperjack, and colbyjack. It has been when it was around 40° outside each time. I was wondering how many of you have tried this so far and I would love to hear your experiences.  P.S. I have been doing the smoking on my 18" Budlight blue.

It has been great so far! It looks like you have it down to a science! I would love to have a food saver but I cant justify it for just cheese. I have been storing mine in baggies. It is usually better to wait at least a week. It hasn't lasted more than a month in the fridge. How is it after it stews for a few months?

It's great after a few months, even better after a few years! As for a food saver, it's good for many things besides cheese.
