Title: Christmas breakfast

A tradition at our house is to make a traditional breakfast after we open presents. 

I decided to cure some bacon for the occasion.   

Six day wet cure with salt, Prague powder, pepper, brown sugar and maple syrup.  Smoked with southern Indiana hickory and apple. 

Before smoking

Done and cooling.   Will refrigerate and slice to fry tomorrow!
