A few months back, I volunteered to cook bbq for a departmental pitch in at work. I made a packer brisket and a pork butt. It was a great success. I'm happy to spread bbq love.
I was humbled when my team requested another brisker for our holiday party tomorrow. Rarely do I get the pleasure to do packer briskets mid week, so I'm fired up.
Here it is trimmed and ready for a rub. Prime packer from Costco. Salt and pepper rub. Goes on the 26 in just a while.

Just ground up a Costco packet brisket for brisket burgers. Every brisket I've gotten from them has been top notch.

Finished product went fast. Flat was completely gone. There were a few morsels of cubed point left. If you haven't tried butcher paper to wrap yet, do it. Best bark ever.

The last roll I purchased was on Amazon. Just search there for unlined butchers paper. 18" x 150' rolls are $20 or less.

Ground brisket burgers are awesome! I've never had to add fat, but in my last batch I added 20% short rib and it does make them better... not much butter but still any increase to awesome is pretty damn good
