Title: Recommendations for knives

I'd like to get some better knives to use for trimming fat, slicing after cook, etc. What would be some recommendations that won't break the bank? Preferably under $100.

This may not be fancy enough seeing as your price point is that high but I can tell you these are the knives my fishermen use for gutting fish and mending nets.


What I can tell you is that they are dangerously sharp.


When I first got married we registered for a fancy set of henckles knives over $400.


I tossed out half of them


We use these in our house and at my dock instead

I suggest you check out America's Test Kitchen on PBS. They are a cooking show, sell cookbooks and also review all types of cooking & baking items. The 6" chef knife they use, exclusively, on their show is made by Victorinox (Swiss Army knives) for about $40 to $50. I own a number of Victoinox knives including the 6" chef, 14" carving knife for briskets, 6" curved knife for trimming, pairing knifes, etc. I am very pleased with the quality and the cost.

I love my Cutco collection.  Not cheap, but as the saying goes, good stuff ain't cheap and cheap stuff ain't good.

Thanks for the recommendations! The curved style knife is the one I always see folks reining with, guess that's the filet knife. Then the longest on in that pic looks like another good one to have for slicing big cuts of meat. Might start with those two.
