V Miller Meat Butcher shop in East Sacramento has very good looking dead animal parts.  Dry brined it with salt for a good 24 hours and then tried not to eff it up.  Used a small piece of hickory for the cook. Wife and kids went camping - time to splurge on my one night home alone.

Very nicely done. Beautiful meat, grilled properly, and treated with love. I'll bet it tasted great.

Hell yeah! Looks great!

I know V Miller's is the top of @inkaddictedchef1's Sacramento meat sources. I've talked to them on the phone. Good folks. I need to go in there and get something to grill.
