Having purchased the hanging rack for my 22" and never getting round to using it.
A few recent posts gave me the motivation and having ordered the gateway hanging rack for my most recent used acquisition. I decided that I'd pop two cherries at once with my first use of an 18" WSM and my first foray into hanging meats
Coal: Briquettes, 135 Total (yes I'm that sad and counted), 30 lit and poured over the top.
Smoke: Alder/Apple one chunk of each
Temps: Circa 250f, with a fair few spikes over 300f
Two chickens halved (Hooked)
Lamb Shoulder 1.2kg (Hooked)
Chicken wings 1.2 kg (15" hanging skewer)
Turned out alrite for a first attempt.

This is probably a dumb question. When hanging meat like that does the lid still fit on. Finger hit wrong button
