275 for two hours with a little brown sugar, ancho and chipotle chile powder, chili powder, garlic powder, onion powder, mustard powder, and a little cumin powder, salt, and fresh black pepper. The salt and brown sugar make it a dry brine and I try to brine them in the am of the day I'm cooking them.
