Broke out the SJP to cook a couple of chicken breasts for me and the wifey. While I love my Weber 22" & my 26", I find the SJP is the perfect size when you just need to throw a few things on. It was my 3rd cook. I cooked a couple of steaks on it the other day for me and my son. Re-used the lump charcoal in it by putting some fresh briquettes on top. I closed down the vents almost all the way, and that really helped slow down the cook. I'm always nervous cooking chicken. I just can never seen to get it right. I either undercook it, or over do it so that it's too dry. These two breasts turned out just right though. Very tender & juicy. I used the Weber Garlic & Herb chicken seasoning to flavor it. It paired nicely with the wife's pasta salad. I'm just hoping I can replicate that cook in the future.

It's good insurance against dry chicken even if overcooked...
