For my memorial day cookout, I decided to do something different, something I hadn't done before. So I went with paella on the grill. Grilling is actually a traditional way to make paella in Spain, and gives it really nice flavor. I used this recipe from Cooks Illustrated.

Got a whole chimney lit and spread it out over the whole grate. I don't have a paella pan so I used a big 14 inch frying pan I have, which fit well on the kettle.
First fried some linguica ( recipe called for Spanish chorizo but I couldn't find any). Then onions and red peppers. Then some rice, stirred around in the oil. Added the broth along with the seafood and let it simmer uncovered for about 20 minutes. Then tossed a small piece of apple on the now dying coals to make a little smoke, and put the lid on for an additional 15 or 20 minutes. Then add some peas and serve with lemon wedges.
