Oops, "use by" (3 days ago). Aged!? New York strip, pre seasoned ...

About 4-6 minutes indirect, each side, then "seared" (not really seared per se, but direct for a couple minutes.)

Oops, 126 degrees. Pulled too early? I put them back on, but indirect.

I blinked, and they were at 133 so I yanked them for good.

I really really really wish I could always afford New York or Rib-Eye for any non-hamburger beef usage. There just is no comparison to pretty much anything else.
Looking good, I would have left it at 126 but that's me, Great tune too!

Yeah I got spooked and didn't realize it would rise so quick put back on indirect. Hell, it would have risen just sitting in the kitchen of course. Live and learn. But it was still great.
Thanks for the write-up. The last pic on the grill is stunningly gorgeous.
Kool kid! :)
Those look delicious... makes me want to bust out the charcoal
