Received my new Trompo King on Friday and could not wait to check it out. I've made Tacos Al Pastor in the past but this is the closest I've come to authentic street tacos. Been using the Vortex for whole chickens which gave me the idea of doing the same for Al Pastor. By putting the Trompo and Vortex on the cooking grate there is plenty of room for closing the lid. The Vortex allows for a slower cook without burning the outside and drying out the center meat. I did find someone on Facebook who had also tried this and he was kind enough to give me some tips before I got going.

It is a blend of pork shoulder and pork loin.

Marinated for 24 hours in a mix of ancho, guajillo, chipotle peppers, pineapple juice and some spices.
How would this compare to a rotisserie version? I'd like to try al pastor but only have a rotisserie.

I have the Weber GBS beer can chicken stainless thing. I am thinking to use it without the can. There is a hole in the middle that allows for a spit to be poked through it.
