St. Patrick's Day Grill-a-thon
March 9th-23th
It's almost that time of year, the time of year that if you forget you're in a lot of trouble. Nooooo I'm not talking about Valentine's Day; I'm talking St. Patrick's Day. It's a time when all grillfells and grillgals get together and just have fun. I'm talking Corned beef and cabbage, Gobs and Gobs of Guinness, Black and Tans, Irish Stew, Green Beer, Soda Bread, Irish Whiskey and In Chicago we dye the river green and have the Northwest Side and South Side Parade.
I am proud to help throw this St. Patrick's Day cook off for all who live in the USA and Canada. Prizes will be shipped using USPS.
Let's see who can grill up some great Irish dishes. I encourage pictures of the food, pictures of prepping the food, recipes if you want to share and party pictures is always a good thing. This will help all the members vote their favorite.
For this St. Patrick's Day Grill-a-thon to run somewhat perfect I am asking anyone who wishes to vote to PLEASE (PM) me and tell me your 1st, and 2nd place favorites. Once I receive them I will do a total count and post the total involved award the prizes the following week and ship them out.

Thanks Dan @Shoestringshop for putting this together. I'm in for sure. Being part Irish/Scottish and from Chicagoland St. Patrick's day is a big deal around
here. I usually do up a traditional dinner, corned beef, cabbage boiled carrots and potatoes, a 1 pot meal. Just how mom did it. Maybe this yr I'll mix it up a bit. ☺

This is starting on Friday! Hope you all have ideas to grill. I can't wait to see the ideas people come up with. I'm going this weekend to pickup my LAMB from Grant Park Packing know for having the freshest pork products available in the Chicago area and the title of "Pork King of Chicago" they have a wide array of fine meat products including beef, lamb, goat, poultry, and other. I need about 8Lbs so I'll buy 12lbs so I have something to snack on while grilling.

My two SIL's are here today and we're making 70 lbs of venison bratwurst, drinking plenty o' beer and I'm smoking 2 corned beef briskets for Reuben sandwiches tonight. Hopefully I can remember to show some finished pics.

Complicated day, but came up with something new. It's my Grandaughter's seventh birthday today, and she's having a sleepover with five of her friends at my house = CHAOS!
Anyway, a full tilt Irish feast was not going to happen, so I came up with a relatively quick alternative. May I present:

I didn't capture all the steps, cause, you know, sleepover. Basically its a mix of processed corned beef, saurkraut, grated swiss cheese, garlic, caraway seed and cream cheese, formed into balls, then coated in flour, buttermilk and panko, then deep fried. The sauce is an amped up Russian dressing with Sriracha. Very good! I did it on my Weber Summit side burner. I hope that counts. ;)

Those St Patrick's balls sound amazing! I am still hoping to through something together but with my daughters 5th birthday and being buried at work not sure it will happen. Might be able to find something quick.

After a long day of sausage making I had to feed 8 adults Reuben sandwiches. They turned out great. I smoked the corned briskets to about 195 degrees and then wrapped and put in a cooler. Briskets were sliced and sandwiches were constructed and grilled on cast iron. Here's some pics.

Fairly traditional but I saw a recipe for Guinness smoked corned beef that I wanted to try.

Boiled for about an hour with seasoning and bottle of Guinness (one for the pot and one for me

). While that was going, got the grill going for a couple of hours of low and slow, with a chunk of apple wood. Kept a nice steady 250 to 275 without any babysitting.

Made two flats so cut one thick for dinner and the other sliced thin for lunch meat. Overall it was a good recipe. It was nice and tender with just a little hint of smokiness.
Not Irish but managed to make a bunch of jerky today too.

Tried something different (low cal) from our traditional Reuben... Corned beef and cabbage salad with dill pickle and Olive oil dressing. Not bad but I missed my marbled rye.

St.Paddys Day was kinda quiet in Sandwich...spent most of the day watching NCAA hoops and drinking Guinness. Some great buzzer beaters in the tourney made for a fun day. As for the main course, I went with my take on "Bangers and Mash". I used Aldis' Irish style bangers (thanks Dan for the great suggestion), little reds potatoes and baby carrots. Fired up the 18.5 green Gen1Platinun for today's cook and the Euro MT pulled chimney duty. Started with the taters, roasted with oil EVOO and Penzeys "Ruth Ann's Muskego Ave." Next onto the onions, sauteed in bacon fat and finished with some Guinness. Next was the gravy, classic roux with Guinness and beef stock. I added the onions back to the gravy and served over both the potatoes and bangers. I went with smashed reds instead of mashing them. Really a great Irish comfort food dinner and the black magic washed it all down, Slainté

St. Paddys day/Sunday cook was an updated traditional Corned beef, cabbage, carrot and red potatoes dinner. I started with a 4lb flat prebrined and seasoned with the packet included. Fired up Lady DI for todays cook with the original Slow n Sear. Locked the SnS in at around 325 put the flat on a rack in a roasting pan. 2 hours into the cook I added some beef stock and covered the pan with HD foil for another 1.5 hours then moved to the Genny Jr. to keep warm. The fresh slaw is red cabbage and shredded carrots w/Apple cider vinegar, sea salt, pepper and honey. Little red potatoes are thinly sliced and coated in Irish butter and smoked sea salt on top of the Weber half rack covered in HD foil.. I used sourdough ciabatta rolls for the sandwiches along with an Irish cheddar and stone ground mustard. OMG, one of the best sandwiches I've had in a long time.

Took a traditional approach as this was my first attempt at any of this on the grill
Quick google search for corned beef and cabbage on the grill led me to the Weber site and their recipe. Figured that was a good place to start. Improvised a little to increase the recipe size to accommodate for the crowd. Feeding 6 and wanted some leftovers.
5 lb corned beef brisket for 1hr on the grill by itself.
Then carrots, onion and celery in the pan with meat on top covered in foil for 2hrs. Then added potatoes and cabbage for the last hr. 4 hour cook total. Also made traditional Irish soda bread on the Genesis.

I hate to admit I had a few balls leftover, (they were big balls after all) but they re-heated just fine. Less crunchy than fresh from the pot, but very tasty. Here's what I did:
St Patrick's Balls
1 lb. deli corned beef
1 1/2 cups shredded Swiss cheese
1 1/2 cups sauerkraut rinsed and wrung dry in a dish towel
8 oz. cream cheese - room temp
1 Tbsp. Dijon mustard
2 tsp. caraway seeds
1/2 cup all-purpose flour
1/2 tsp. kosher salt
1/4 tsp. ground black pepper
1 1/2 cups buttermilk
2 cups panko bread crumbs
Fill a large pot 1/3 full with canola oil and place over medium heat until 350 degrees F.
Place the corned beef in a food processor and puree until finely chopped.
Place corned beef in a large bowl and add the Swiss cheese, sauerkraut, cream cheese, Dijon mustard, and caraway seeds if desired. Mix well. Shape into 2 inch balls.
In a small bowl or pie pan whisk together flour, salt and pepper. Place buttermilk in another small bowl and the panko in another bowl.
Dip each ball into the flour, then the buttermilk and then the panko. Repeat with all your balls.
Fry the balls, about four at a time, making sure they are totally submerged in the oil for 4-5 minutes or until golden brown.
Remove from pot to a paper towel-lined plate.
Kick'n the Balls Dipping Sauce
1 clove garlic, chopped
½ onion, chopped
¾ cup mayo
¼ cup Sriracha
1 tablespoon Giardiniera relish (Pickle relish can be subbed in.)
1 hard-boiled egg
Salt and pepper to taste
Add the garlic and onion to a food processor to form a paste.
Add the remaining ingredients and process until smooth.
Push the sauce through a strainer to smooth it out even more.
Make this a day ahead if you can - it gets better overnight. Keep it in the fridge for 2 or 3 days.
I will definitely make those balls!
