I always use my Kettle Kone (same as vortex) for wings now.

Nothing better than smelling BBQ on a Sunday afternoon.

The debate in Australia lately is whether these are burgundy or plum coloured, I don't really care. I love the food that comes out of them.

Crispy Doritos Chicken Wings.
Ingredients:
1kg Wings
170 grams of Cheese Supreme Doritos
170 grams of Nacho Cheese Doritos
2 cups of plain flour
3 tablespoons of garlic powder (2 for flour mix, 1 for the Doritos mix)
3 tablespoons of onion powder
2 teaspoons of celery salt
½ a teaspoon of black ground pepper
2 tablespoons of paprika
1 teaspoon of chilli flakes
600 mls of Butter Milk
20 grams of chives
5 eggs
1 tablespoon of dark soy sauce
Directions:
1. Place wings in a zip lock bag with buttermilk and leave in fridge for an hour or two.
2. Mix the garlic powder, onion powder, salt, pepper, chilli flakes and flour together in a bowl.
3. Beat the eggs in a bowl with dark soy sauce.
4. Break the Doritos into breadcrumb sized pieces, I use a food processor or you can put them in a bag and crunch them up. Mix in the finely chopped chives, paprika and garlic powder.
5. Take the wings out of the fried, cover them in flour, then place them in the egg mix and then roll them in the Doritos mix.
6. Place wings in a preheated Weber (10 minutes preheated), using a vortex or similar and cooking using indirect heat. Place the lid on and cook for 50 minutes.
Prepare to make a lot of friends, these are absolutely AWESOME.
Those look and sound great! What do you guys like for wing sauces down there?

The Kettle Kone is made of a thicker mild steel (I have some custom stainless ones as well) and they act a heat sinc as well. I know of others who have tried both and they say the kettle Kone creates more heat.
