Was cleaning out the freezer and realized I had four lamb chops. I usually cook them on my Q gasser. Since these chops were so thick I decided to cook them on my crimson. Seared them first then moved them over to finish with indirect cooking. They turned out to be the best lamb chops ever! Threw together a simple dinner with tater wedges and a salad.

Those are some thick Lamb chops I love them too! just don't cook them enough

I seared them and then moved them over opposite the hot coals. I then put on the lid making sure the vent holes in the lid were also opposite the hot coals. This will make sure the heat will flow over the meat for indirect cooking.
