Title: Boneless beef chuck country ribs

Anyone have thoughts on smoking these? Went to pick up some spare ribs and they caught my eye. Beautiful marbling so i figured I'd give them a shot. So far I've just put some weber "sweet cracked pepper dry rub" on them and have them wrapped up in the fridge. I picked up the spare ribs too

I've never seen beef country ribs, only pork before. I think you're off to a good start though; I love a good peppery beef. My favorite sauce right now is a bourbon brown sugar glaze. Drizzle some on the ribs right when you're ready to eat!
