Title: Pork Belly Burnt Ends from ‘Roswell’

Today I did my first cook with pork belly. I fired up Roswell (my mothership Ranch) with some Charbroil Lump Charcoal. Seasoned the cubes of porky goodness with Swamp Boys @Rub 's Original Rub and smoked them for a couple hours. Next panned the cubes and gave them a liberal coating of brown sugar, honey and butter and foiled the pan and put them on for a couple more hours. Then finally glazed them with a mixture of Swamp Boys Original BBQ sauce, apple juice, apple jelly and Franks Red Hot.

The final product came out quite tasty. Pork Belly will definitely make a reappearance on the household menu.
