The pork was a loin chunked up and marinated in this mix for about 4 hours...
½" chunk of ginger - grated
2 cloves garlic - grated
1 cup Hoisin sauce
1 cup orange juice
1 tsp sesame oil
1 tsp Secret Aardvark hot sauce
3 scallions - food processed/finely minced
splash of soy sauce
Veggies were red onions (would have preferred Vidalia), yellow and green zucchini, and mushrooms. They were soaked in EVOO, salt, pepper, a splash of Hoisin sauce, and garlic, for about the same amount of time the pork sat.
The pork got strung on these Fire Wire skewers that I really have fell in love with. The veggies got inserted in this perforated pan that I got from Williams-Sonoma a few years ago. Been looking for another one for a friend, not sure if they're still available.
I fired up the Weber with RO briquets and the Vortex wide side up with lit coals around the outside and foil in the bottom of it. Got the temp up to 325-350 and commenced to cook. I placed the veggies in the center of the grill. The pork skewers wrapped around the outside of the pan.
