Title: Smoked Sockeye Salmon

Set the M-Code off this week on its maiden cooks. It's been a bit of learning curve understanding the vents and finding their sweet spots. So far it's been hot and fast cooking but today I did a little slower smoking with cedar planked sockeye with a light smoke from some hickory. Turned out fairly well..

That hickory gave them a great color. Nicely done!

On this one I just went with Kroger Blackening seasoning. It's not my favorite but I wanted to use something different. I usually use Paul Prudhomme Blackened Red Fish.

Real pretty. Hard to beat smoked salmon.
