Post by: JordanW on June 03, 2017, 05:27:26 PM
Had a little time today to try my hand at the lollipop game. So far so good. I try them last weekend. They were a hit but they're a lot of work.

@Davescprktl  a homemade bbq sauce... first attempt on that as well. Needs a little tweaking but overall they were killer!

Chicken Lollipops -
Package of chicken drumsticks
Cut bottom off to create flat surface
Pull skin down towards meat part of drumstick
Cut about 1-2 inches down from knuckle all the way around leg bone
Pull skin and everything else up towards knuckle
Cut knuckle off just below (towards meat), clean to the bone
Dry rub meat with favorite poultry rub (I use Caribeque Honey Heat Pork and Poultry rub)
You can cook them indirect at 350-375 for about 35-45 minutes
Probe for internal temp of 165*-175*
While they are cooking, heat up your favorite BBQ sauce or whatever you like to baste chicken with. I make my own. If you use straight BBQ sauce, you may want to cut it with chicken stock to thin out.
Dip cooked drumstick in sauce. I use a short mason jar, works pretty good and contains the mess.
Rest them on a cookie cooling sheet for 5-10 minutes.
EAT!
